Kick butt yesterday

Gotta love those kind of days.

Step n sculpt class at the gym after waking up late.
Applied for another job.
Laid out and swam with Cor and Becky.
Napped in the sun.
Doubleheader softball- won another game!
Watched the guys games- they won both, with the stands full of fans.
In depth girl convo in the parking lot with Kayla and Karen.
Phone date :)

Try this mousse

I'm not really a recipe poster, but this is one I can't resist sharing. My mom got this mousse recipe from some magazine I think, and she had me try some of the leftovers last time I was home. Both of us were actually scraping the container with our spoons, it was that yummy!

Chocolate of the Gods Mousse with Raspberries & Mint (serves 4-8)

2 c Hass avocadoes (about 2)
1/2 c + 2 T maple syrup
2-4 T organic sugar (depends how sweet you want it, I used 2 and it was still good)
2 T coconut oil (probably not something you have lying around the kitchen unless you're my mom, it's similar to shortening)
1-2 teas vanilla extract (nonalcoholic)
1 teas balsamic vinegar
1/2 teas shoyu (soy sauce)
1 c pure cocoa powder
1 pint raspberries
handful fresh mint leaves, chopped

1. In a food processor or blender, blend the avocadoes, maple syrup, sugar, coconut oil, vanilla, balsamic vinegar, and shoyu until smooth and creamy

2. Add the cocoa (sifting beforehand) and blend until smooth

3. In dessert dishes, layer raspberries, mousse, mint, raspberries, then more mint

Can be stored up to a week in the fridge or frozen up to a month

I love this mousse because it's not too sweet, and has a slight tanginess. It tastes like expensive chocolate! (just had a thought: SLW Chocoholics!)

Keeping busy.

A few weeks ago, we made a short trip up to M to admire Baby Anton, chill with these girls, and attend some relatives grad parties.
Watching guys softball. I bet the other teams are jealous of how many female fans our team always has ;) Just a few of them...
Downtown Wayzata for ice cream with Cor and Kayla.
We sat facing the lake and talked and talked. Then got up to take some pictures by the tree. Had to document what a fun night it was!
Celebrating with Steph; she turned 22 and graduated from massage school! We had a girls party for her at my parents, and it felt so comfortable to sit and chat with all these ladies.
Just a few more weeks until July. Already?!

53 and 28

are the ages that dear old Dad and bro David turned this year. June 8th was Dads bday, and the 9th was Daves.

Mine and Daves text convo, so typical us:

K: Happy Birthday. 2 years to thirty. Heh heh, I'm so mean.
D: Thanks sport. Doesnt bother me a bit because i will be thirty years young.
K: 2 years to the decline of your health and your hair.
D: Seems hard to believe now since i am as healthy as a bull moose and have hair for days and days
K: You know, dad said the same thing at 28 too
D: But he was never actually lucky enough to find the foutain of youth
K: Did you find it at the end of the rainbow?
D: No it was just sitting there under the deck of all places

Texting Dave always makes me laugh, which Kayla can attest to. After she hears me, she asks "what did he say now?"

It's kind of been a tradition since I moved to the cities that I make a cake for Dave and bring it to whatever social event is happening that night. Two years ago, we had a bean bag tourney- we were reminiscing about that yesterday- but I can't remember what went on last year. Last night, I brought a cake to the guys house following our softball games, where we watched the Stanley Cup finals, sang to David, then sat out by the fire.

I meant to take pictures, but of course in the moment, I didn't have my camera with me. You know Dave, so just picture him grinning, then blowing out his candles without leaving any burning for girlfriends (what!).

This is from a few months back, but I'm putting it on just to give all you single ladies out there an idea of how cute and sweet he is ;)
